Step 01
Green Ethiopian coffee beans are washed and gently roasted over hot coals. Shaking the pan evenly fills the air with aromatic smoke — an ancient invite to step closer.
Step 02
The roasted beans are ground using a wooden mortar and pestle called a "mukecha". The rhythmic thumping signals the freshness of the grind.
Step 03
Ground coffee is poured into the "jebena" — a clay pot with a spherical base and elegant neck. Placed on hot coals, it slow-simmers into an intense extract.
Step 04
The coffee is poured gracefully from height into small cups called "sini." Guests enjoy snacks like popcorn across three traditional stages of the ceremony.
